The weather is cold out there, at least in these parts, Fall is here with hints of Winter on it's way. A perfect time to enjoy a hot cup of soup! I love soup, a great cup of soup can be so satisfying and it just warms ya to your bones.
Enter Progresso Soups. I've always been a big fan, always my go to when I am in the mood for some yummy soup with no time to make a homemade pot of my own. With so many choices, there is always something to satisfy everyone in this house and with 7 people here I need goodness and variety!
Well to think I was happy with the selection and variety, Progresso now introduces four new, great tasting Progresso soups that have 28% of the recommended Daily Value of fiber per serving (7 grams) and have no added MSG* or artificial flavors. The new varieties include Chicken Tuscany, Creamy Tomato Basil, Hearty Vegetable and Noodles and Homestyle Minestrone.
I've had to find ways to add additional fiber to what I eat since my Thyroidectomy - this is so great! and GOOD! Adding Fiber to your everyday diet is just so important for good overall body health. I've learned this lesson big time since having my thyroid removed. I thought I was doing enough, but NO! Progresso has made it easier for me to meet some of those fiber goals.
I had the opportunity to try out the Progresso Chicken Tuscany, color my mouth happy and my tummy satisfied. Rich, hearty, flavorful it hit the spot! Great source of fiber, low in fat, no artificial flavors or MSG added - wonderful! Hubby loved it too! (and he is one picky soup guy). I was able to enjoy my soup served in a large fantastic soup mug complete with soup spoon. PERFECTO! Served with a side of bread sticks or crackers, maybe even a light sandwich - meal complete!

One of my favorite recipes is this easy one from Weight Watchers:
8 Can Soup
1 (11 oz) can yellow corn 3 points
1 (15 oz.) can sliced white potatoes 2.5
1 (15.5 oz) can diced tomatoes 1
1 (15 oz.) can green beans or okra 1
1 (15 oz.) can Veg-All 2
1 can Hormel chili w/ beans (Turkey) 3
1 cam Hormel chili w/o beans (Turkey) 6
1 can Campbell's Old Fashioned
Vegetable Soup 2.5
Total 21 points
Open all cans (do not drain) and empty into pot. Heat and simmer for 5 minutes.
Makes 12 cups 2 points per cup

3 tablespoons olive oil
1 cup minced white onion (about 1 small onion)
1/2 cup chopped zucchini
1/2 cup frozen cut italian green beans
1/4 cup minced celery (about 1/2 stalk)
4 teaspoons minced garlic (about 4 cloves)
4 cups vegetable broth (Swanson is good *note: Do not use chicken broth!*)
2 (15 ounce) cans red kidney beans, drained
2 (15 ounce) cans small white beans or great northern beans, drained
1 (14 ounce) can diced tomatoes
1/2 cup carrot, julienned or shredded
2 tablespoons minced fresh parsley
1 1/2 teaspoons dried oregano
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
3 cups hot water
4 cups fresh baby spinach
1/2 cup small shell pasta
Directions
1Heat three tablespoons of olive oil over medium heat in a large soup pot.
2Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
3Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
4Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
5Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.

Taco Soup (entry 1/2)
1 lb. ground beef, browned & drained
½ pkg. Taco Seasoning
1 can Progresso Minestrone soup
1 10 oz. pkg. frozen mixed veggies
1 can ranch style beans, undrained (or substitute pintos or northern)
1 10 oz. can diced tomatoes
1 15 oz. whole kernel corn, undrained
Mix in crock-pot.
Cook on low all day.
Great w/ warm cornbread!!

1 - Incredible Vegetable Soup
* 1 yellow zucchini, chopped
* 3-4 large carrots, chopped
* 1 cup uncooked brown rice
* 1 15 ounce can diced tomatoes (undrained)
* 1/2 small cauliflower, chopped
* 1/2 cup diced onions
* 1-2 tbsp olive oil
* 1 tsp minced garlic
* 1 49 1/2 ounce can chicken broth
* 1-2 tsp oregano
* 1-2 tsp Italian seasoning
Saute garlic and onion in oil in saucepan. Add and lightly saute carrots, zucchini, and cauliflower. Add broth, rice, and tomatoes and bring to a boil. Simmer 35 minutes or until rice is soft. Add seasoning.
Number of Servings: 4-6

My favorite soup is broccoli and cheese soup! (Entry #1)
Broccoli Cheese Soup
4 cups chicken broth
1 cup water
1 cup half-and-half cream
5 slices Kraft cheddar cheese slices
1/2 cup flour
1/2 teaspoon dried onion flakes
1/4 teaspoon ground black pepper
4 cups broccoli florets (bite-size)
1/2 cup shredded cheddar cheese (to garnish)
2 teaspoons minced fresh parsley (to garnish)
Combine chicken broth, water, half & half, cheese, flour, onion and pepper in a large saucepan. Whisk to combine and to break up any lumps of flour, then turn heat to medium/high. Bring soup to a boil, then reduce heat to low. Add broccoli to soup and simmer for 15-20 minutes or until broccoli is tender but not soft. For each serving spoon one cup of soup into a bowl and garnish with a tbsp of shredded cheese and a pinch of parsley.

I incorporate fiber into my daily diet by eating frosted Mini-Wheats for breakfast every day. Seriously. I eat massive amounts of Mini-Wheats. I have one of those super CostCo boxes of them - it takes me probably three weeks to go through one of those (all by myself).

My favorite soup recipe is the chicken soup my grandma makes - it's nothing like regular chicken soup, but way more delicious. Here is the recipe:
Fill a large soup pot 3/4 of the way with water. Put in a bag of baby carrots, a few pieces of celery, an onion (quartered), and a large can of crushed tomatoes. Also add ~ 1 lb raw chicken. Bring to a boil, then cook at a simmer. When the chicken is cooked through (probably in about 30 minutes ~ an hour), remove it and shred it. Run the soup through a strainer into a large bowl to remove the celery, onion, carrots, and larger chunks of tomato. Put the soup back into the pot and bring to a boil - cook noodles in the soup and add the shredded chicken at the end. Serve with pecorino romano cheese.

For a really quick meal...I take a couple cans of progresso onion soup, throw in a few bags of frozen mixed veggies & a can of whole tomatoes,,,if I have left over beef, I toss this in too, if not, its good without...the kids love it & so do I :)
